Whet Your Appetite with Pairings & Small Plate Offerings at the

15th Annual Grand Rapids International Wine, Beer & Food Festival

 

(GRAND RAPIDS, Mich) — One of the most unique experiences offered at the 15th Annual Grand Rapids International Wine, Beer & Food Festival (November 18 & 19 at DeVos Place) is the exclusive one-hour multi-course curated Pairing dinners. Modeled after the “Chef’s Table” concept, these Pairings are limited to 20 guests per seating and include educational and entertaining culinary commentary by the Chef along with wine industry experts who share insights into the selection of the beverages to compliment each course.

While the Pairing seatings for Red Water Restaurants and The Kitchen by Wolfgang have already sold out, an exciting new 5-course presentation features Chef Trimell Hawkins of the yet-to-open Solace – Comfort 365 restaurant. With five seatings (Friday – 6:30pm and 8:30pm; Saturday – 4pm, 6pm and 8pm), the $85 per person menu includes:

  • Chicken and Waffle Macaron (Vegan Option: Smoked Maple and Sea Salt Macaron)
    Paired with Williamette Valley Vineyards Riesling
  • Southern Curried Yam Bisque (V)
    Paired with Cambria Katherine’s Vineyard Chardonnay, Santa Barbara
  • Sweet Cornbread Panisse with Remoulade and Chow Chow (V)
    Paired with Ochoa White, Spain
  • Smoked Chicken Cassoulet (Vegan Option: Wild Mushroom Cassoulet)
    Paired with Raeburn Russian River Pinot Noir
  • Beignet with Moscato Poached Pear
    Paired with Chateau Gravas Sauterne, France 

All Pairing reservations, as well as Festival admission, tasting tickets (sponsored by Studio C) and Tasting Sessions, must be purchased online at GRWineFestival.com or via the Official Festival App (GR Wine Festival) available through Google Play or iTunes as part of the new Digital Box Office (meaning no paper ticket box office on site).

Twice during the Festival, Chef Trimell will be on the Meijer Food Stage presenting Yam it up this Holiday Season (Friday 4:30 pm – 5:15 pm and Saturday – 2:30 pm – 3:15 pm).

Chef Trimell was born in Chicago but spent most of his childhood in Holland, Michigan – where he spent a great deal of time in the kitchen with his beloved grandmother. He discovered his own passion for cooking while serving in the U.S. military. After leaving the service in 2008, he worked his way through various kitchens until attending and completing his culinary training at the Secchia Institute of Culinary Arts under Master Chefs Campbell, Renusson and Dunn. After graduation, Chef Trimell spent a summer working with Chef Mark Elliot, the esteemed owner of Elliot’s on Linden in North Carolina. He then spent time as Sous Chef under Master Chef Kevin Dunn. Although trained in classical French cooking, Chef Trimell brings his own heart-felt style and flair, blending southern elements into dishes and focusing on cooking with great technique.

Solace – Comfort 365 is Chef Trimell’s restaurant that will open next year. His background in southern and soul food is elevated by his French culinary school training resulting in flavorful French creole cuisine. That style and the foundation of that allows Chef to use great technique while still staying true to himself and providing comfort in his cooking. Solace will be a service focused and driven restaurant that is sure to provide an elevated tasting experience with some approachable familiarity to it.

In addition to the Pairings, 15 local restaurants are serving up globally inspired Small Plate samples making for a mouth-watering progressive evening. In The Vineyard (Steelcase Ballroom) you’ll find: Bay Pointe Bar & Grille, Big O’ Smoke House, Curry Kitchen, Jose & Justin’s Pig Gig, Knoop, MDRD, The Melting Pot, Monsoon and Shesco Mediterranean Grill; Beer City Station (Hall C) will feature Walburgers, One Twenty Three, Slows Bar-B-Q, Tacos El Cunado and Tamales Mary. One Bourbon will be set up in the new Barrel Room (Welsh Lobby) and additional offerings will be available in the RendezBREW area along the riverside of the Grand Gallery, including coffees, cordials and desserts.

ShowSpan and Festival Co-Producer, the Grand Rapids-Kent County Convention/Arena Authority, look forward to presenting this annual culinary celebration to showcase the full menu of food and beverage education and entertainment that West Michigan has come to expect.

The 15th Annual Grand Rapids International Wine, Beer & Food Festival is open 4-10pm on Friday, November 18 and 2-10pm on Saturday, November 19.
